Preparing ahead of time can make or break our healthy plant-based lifestyle. The KISS principle (Keep It Simple Sweetheart and Keep It Starch-Smart) is still rule number one. Easy food preparation is the key to success. I would like to share some ideas we have found that might work for you.
Lindsay Nixon, the Happy Herbivore, shares Premixed Recipe Ideas with us in which she prepares dry mixes ahead of time, putting them in mason jars with labels. When you come home from a long day at work, you can just add the wet ingredients to make delicious banana muffins, etc. This can also be done with seasonings. This would be a great activity to do with your children, so that they can learn how to prepare and enjoy fast and healthy meals.
Angela Lidden from Oh She Glows was challenged to come up with quick and easy lunches that could be made on Sunday and served through the following week. She came up with 5 Make-Ahead Vegan and Gluten-Free Lunches. You can use the same concept to create other weeks of meals.
I am partial to Jeff Novick's Fast Food Burgers and Fries. The burgers can be made, frozen and put into sandwiches. They make excellent travel food. There are many variations of Novick inspired burgers. The sky is the limit. Here is a Black Bean Burger recipe from Forks Over Knives that was inspired by Jeff Novick.
In my household the Instant-Pot is our invaluable tool for making lots of simple and wholesome staple foods quickly and easily. In fact there are two Instant-pots on the counter at all times in my home. I have discussed how to use the Instant-Pot in the blog: Staying Plant-Strong on the Road!
